
Holiday Break.
The holidays came quick this year and I found myself overwhelmed. This being the first holiday season without my husband, it has been a tough couple of months. I am thankful and grateful for the many wonderful people who are there to support me during this time. If you are new to my blog, you can find our story here.
New Year….. Back to the mission
As the new year approached, I found inspiration and purpose by planning my fundraising races for 2021. My next post will be information on my first race of 2021, so check back soon for details.
The amazing rv community
One of the best and most unexpected parts of my travels have been the people I’ve met. I started this journey to sort of “run away from home”, take time to process my grief and try to find my new purpose. Meanwhile, I have been so enlightened by the people I come across. Although most of them don’t know my story, they are always welcoming, inviting and helpful. I’ve had several “neighbors” make my day with their actions. My current neighbors surprised me with bagels and cream cheese on Christmas Eve morning. Those acts of kindness and generosity make me step out of the turmoil in my head and appreciate the world around me. It also reminds me to pay it forward because you never know what someone is going through and you could be the positivity in their day.
Back on the Road
After a holiday family visit, I am excited to get back on the road. My goal is to get at least 3 states added to my fundraising map. You can see more about that mission here. Since I spent most of the holiday’s eating my feelings, I must work on getting back in 5K shape! I have included one of my quick, easy smoothie recipes below. Even though this is a simple green smoothie recipe, it’s one of my favorites. Do banana and mint go together? Yes, and it tastes just like a mint chocolate chip milkshake!
Healthy Mint Chocolate Chip Smoothie
Equipment
- Blender
Ingredients
- 1 Cup Vanilla Almond Milk
- 1 1/2 Frozen Bananas
- 1 Cup Spinach
- 1/4 tsp Frontier Mint Flavor
Instructions
- Add the spinach, bananas, almond milk and mint flavor to the blender container. Blend until smooth.
- Cut chocolate square into slivers or chunks, mix into smoothie.
